Isaan table sauce carrying a measured dose of chilli tincture
A table sauce that takes its heat from a fat tincture and its aroma from raw chilli flesh.
Chicken Marylands braised on a bed of deep-gold onions, with the heat dosed from a chilli tincture
Four chicken Marylands braise on 1000 g of onions cooked to deep gold. A pounded paste of lemongrass, ginger, coriander root and chilli is fried until the fat separates. One third of the paste goes under the skin. The rest goes into the onion bed. The heat is not put in as whole chillies. The placentas of six Carolina reapers and one habanero are infused into 80 ml of oil at 65 degrees C. This tincture is then dosed by the millilitre. The recommended dose is 12 ml for four people. The dish started as a central Thai plan. The cook had no galangal, no makrut lime leaf, no tamarind, no shrimp paste, no dried mushroom and no Thai basil. Each substitution moved the dish north. The result follows the grammar of gaeng hung lay, a Shan-influenced Northern Thai braise: onion, potato, ginger, a sour and sweet axis, and no coconut milk. The braise is covered for 90 minutes at 145 degrees C convection. It is then uncovered for 20 minutes at 220 degrees C. The first stage converts collagen. The second stage dries the skin.
First version. Records the build as it was actually cooked, with sunflower oil, no galangal, no makrut, no tamarind, no shrimp paste, no dried mushroom and no dried chilli.
Put on nitrile gloves. Open a window. Turn on the extractor fan. Put baking paper on the board. You can fold the paper up and discard it after the chilli work.
Dry the chicken with paper. Rub the salt over all sides. Push a little salt under the skin. Put the chicken on a rack. Refrigerate it uncovered for 4 hours.
Cut the reapers and the habanero in half lengthways. Cut through the stem. The stem gives you a handle.
Put the tip of a paring knife under the pale ridge inside each pod. Lift the ridge away from the wall. Do not scrape down at it. Remove the cross-walls also. Put all the ridges and seeds in a small pan.
The pale ridge is the placenta. It holds about 80 percent of the heat of the pod.
Keep the flesh of one reaper and all the flesh of the habanero for the paste. Freeze the flesh of the other five reapers.
Add 80 ml of the oil to the pan of placentas. Heat it to 65 degrees C. Do not let it bubble. Do not fry it. Put the lid on. Hold it for 15 minutes.
Frying a superhot chilli puts capsaicin into the air. It will make the room unusable.
Pour the oil through a fine sieve into a jar. Press the solids with a spoon. Discard the solids. You get about 80 ml of tincture.
Cut the mixed chillies in half lengthways. Keep all the white membrane. Set 3 green chillies to one side for the bed.
Cut the bottom 100 mm from 5 lemongrass stalks. Slice them finely. Slice 30 g of the ginger. Scrub the coriander root.
Pound the paste in the mortar. Work from the hardest item to the softest. Start with the white pepper and the coriander seed. Pound them to a powder. Then add the ginger, then the lemongrass, then the coriander root, then the mixed chillies, then the reaper and habanero flesh, then the garlic and the shallot. Pound in 15 ml of the fish sauce last. Keep the paste coarse. Do not make it smooth.
The 15 ml of fish sauce stands in for shrimp paste. Add no sugar here. Sugar burns before the paste is ready.
Heat 30 ml of the oil in a wide pan on medium-low heat. Add the onions and a pinch of salt. Stir them every 3 minutes. Cook them for 35 minutes. Stop when they are deep gold. Do not take them darker. Put them in a bowl.
Deep gold is the colour of strong honey. A darker onion tastes of caramel and hides the lemongrass.
Melt the gai yang stock in the same pan with 60 ml of the oil on medium heat. Add the paste. Fry it and stir it. It stays wet and loud for about 10 minutes. Then it gets quieter and it drags behind the spoon. Then clear fat separates and collects at the edge. Stop 30 seconds after the fat separates.
Drag the spoon through the paste to test it. The channel fills with oil when the paste is ready. It fills with paste when the paste is not ready.
Take out one third of the paste. Keep it for the skin. Mix the onions into the rest of the paste off the heat.
Dissolve the palm sugar in the hot water. Add 45 ml of the fish sauce, the vinegar, the dark soy sauce, the MSG and 12 ml of the tincture. This makes about 400 ml. Decide the tincture dose now. You cannot remove it later.
8 ml is hot. 12 ml is the recommended dose. 20 ml is very hot. Do not go above 28 ml.
Spread the onion and paste mixture in a deep roasting tray. Hit the 6 remaining lemongrass stalks with the back of a knife. Put them in whole. Add the bay leaves, the 25 g of ginger coins and the 3 reserved green chillies. Put the potatoes on the bed with the cut side down. Pour the liquid around the edge of the tray. Do not pour it over the potatoes.
The tray looks dry at this stage. This is correct. The onions release 400 to 600 ml of water in the first 20 minutes.
Lift the skin of each chicken piece with your fingers. Push the reserved paste onto the meat below the skin. Put the skin back. Rub plain oil on the outside of the skin. Do not put paste on the outside. Put the chicken on the bed with the skin up. The chicken must sit above the liquid.
Cover the tray tightly with foil. Cook it at 145 degrees C with the fan on for 90 minutes. Cook until the thigh meat is 88 degrees C.
A fan oven runs 15 to 20 degrees C hotter in effect than a static oven. 145 degrees C with the fan is the same as 160 degrees C without it. 88 degrees C converts collagen. It is far above the temperature for a chicken breast.
Remove the foil. Set the oven to 220 degrees C with the fan on. Cook for 20 minutes. Look at the skin from 12 minutes. Stop when the skin is dark brown and dry. Do not let it go black.
Tap the top of the thigh with a spoon. A dull sound means the skin is still wet. A light hollow sound means the skin is dry.
Move the chicken to a warm plate. Rest it for 10 minutes. Tilt the tray. Spoon the clear fat off the top into a bowl. Keep the fat.
The floating fat hides the depth of the sauce. Remove it before you judge whether to reduce the sauce.
Taste the sauce. Let the spoon cool for 10 seconds first. Add lime juice one quarter of a lime at a time for acid. Add palm sugar if it is thin and sour. Add fish sauce or 1 g more MSG if it is flat. Do not add the vinegar now. Do not add more tincture.
The heat of a superhot chilli reaches its peak 10 to 20 minutes after you eat it. You cannot judge the heat at this stage.
Put the chicken back in the tray. Shave the bottom of the last 3 lemongrass stalks very thin. Put them on top with the mint, the coriander leaf, the toasted rice powder and the fried shallots.
Grate the zest of one lime over the tray. Do this in the last 10 seconds before you serve. Squeeze the juice of that lime over the tray. Serve the carrot, the lime wedges and cold full-fat yoghurt at the table.
Limonene evaporates within one minute of heat. Casein in yoghurt removes capsaicin from the mouth. Water does not.
Capsaicin is stable to about 240 degrees C. Nothing in a 145 degrees C braise reduces it. The oven only spreads it through the dish. What goes in is what you eat.
The burn of a superhot chilli reaches its peak 10 to 20 minutes after the bite. It is not immediate. A bird's eye chilli at 80000 Scoville feels immediate because the dose is small. A Carolina reaper at 1600000 Scoville has a long loading curve.
So do not season the dish to taste for heat. You will taste it, think it is acceptable, add more, and be in trouble 15 minutes later.
Measure the dose. Wait. Then decide.
At the table, start each person on one quarter of a teaspoon of any chilli sauce. Anyone who takes a second spoon within five minutes has not yet met the first one.
Serve cold full-fat yoghurt or milk. Casein micelles hold capsaicin and lift it off the tissue. Water and beer only move it around the mouth.
Capsaicin at this concentration also raises heart rate and blood pressure. Eat the potatoes and the rice first. Do not start on an empty stomach.
Oil does not slow evaporation. Water leaves the tray through the surface. The two liquids do not mix. The oil floats and does not change.
So the tray looks full when the water has already gone. A cook then reduces it further. Now a small quantity of concentrated sauce boils in a large quantity of hot oil. Push it further and the two combine into a cloudy greasy liquid that will not separate again.
Tilt the tray. Let everything collect in one corner. You will see two layers. Spoon the clear fat into a bowl.
Now judge the sauce below. Usually it needs no reduction at all.
If the sauce is thin, reduce it on the hob for 5 minutes. Do this with the fat removed. Reduce first, then correct with lime. If you correct first you concentrate the acid you just added.
Put one or two spoons of the fat back at the end if the bed looks dry. That fat carries capsaicin and the aroma of the paste.
This build had no galangal, no makrut lime leaf, no tamarind, no shrimp paste, no dried shiitake, no padaek, no dried chilli, no Thai basil and no coconut oil.
Galangal to ginger plus bay leaf and white pepper. Galangal is camphoraceous. Its terpenes are 1,8-cineole and pinene. Ginger is warm and sweet from zingiberene and gingerol. Ginger alone is not enough. Bay leaf carries a high proportion of 1,8-cineole. Green cardamom carries more, if you have it. White pepper contributes pinene. Use ginger for the bite and bay leaf for the pine note.
Makrut lime leaf to more raw lemongrass plus lime zest. This is the one real loss. Makrut leaf is dominated by citronellal. Nothing in a European cupboard makes citronellal. Increase the raw lemongrass at the end and grate lime zest over the tray at the last moment.
Tamarind to Chinkiang vinegar plus more palm sugar. Tamarind concentrate is about one third sugar. Vinegar is not. Raise the palm sugar from 35 g to 45 g when you make this swap.
Shrimp paste to 15 ml of fish sauce in the mortar. Same ferment family. It keeps the savour. It does not give the thick pungency. Three anchovy fillets pounded in get closer.
Dried shiitake and padaek to more MSG plus dark soy sauce. The mushroom was there for guanylate, which multiplies glutamate. Without it you must add glutamate directly. Dark soy also gives colour.
Dried chilli to nothing. Sweet paprika restores the red colour if you have it. If you do not, accept the brown. A hung lai braise is brown.
Thai basil to mint and coriander leaf. Do not chase the anise note of estragole. Mint changes the job instead. Menthol activates TRPM8, the cold receptor. That is the direct counterweight to the TRPV1 activation of the capsaicin.
Coconut oil to sunflower oil. Fat here is a solvent and a carrier. Chain length changes the rate of extraction, not the quantity. At 145 degrees C this makes no practical difference. Coconut oil matters more in the 65 degrees C tincture, where its medium-chain triglycerides extract faster.
Taken together these swaps moved the dish away from central Thailand. Gaeng hung lay has no galangal, no makrut lime leaf, no Thai basil and no coconut milk. It has ginger, onion, a long wet cook and a sour and sweet axis. The onion bed came from Massaman logic at the start. Every substitution moved the dish closer to the tradition it was already borrowing from.
The first question about this dish was whether caramelised onion works with Thai flavour. It does, but not through the central Thai door.
Two Thai traditions use onion in quantity and cook it long.
Massaman came to Ayutthaya through Persian and Indian Muslim trade in the 17th century. It uses onion, potato and warm whole spice in a long braise. It is the source of the potato in this dish.
Gaeng hung lay is Northern Thai, from Shan and Burmese trade. It is a long-braised dish with ginger, tamarind and palm sugar. It uses no coconut milk. It is the source of the structure of this dish.
In central Thai green curry the allium job is done by pounded shallot and garlic in the paste. That is the register in which caramelised onion would be wrong.
This build had no green cardamom. Bay leaf alone carried the 1,8-cineole that stands in for galangal.
Green cardamom seed is 25 to 45 percent 1,8-cineole. That is the same compound that gives galangal its pine and camphor character.
Try 3 pods, seeds only, pounded into the paste. Try 2 more pods, bruised whole, in the bed. The pods in the bed release slowly through the 90 minutes. The seeds in the paste are fried and release at once.
Cardamom is also correct for a Massaman, so it does not pull the dish anywhere it has not already been.
Chill the leftover sauce overnight first. The fat sets as a cap on top. Lift it off. Below it is a firm jelly set by the collagen from the chicken.
This gives two ingredients instead of one.
The fat is chicken fat carrying the aroma of the paste and some of the capsaicin. Use it as a cooking fat. One teaspoon is enough.
Uses for the jelly, in order of value:
Taste it before you reduce anything. Reduction concentrates the sodium faster than it concentrates the flavour. Add water, not more seasoning.
The leftovers taste hotter than the fresh dish, not milder. The terpenes and esters degrade over days. Capsaicin does not. It is not volatile and refrigeration does not affect it. So the balance shifts while the burn stays the same.
Built in one session from a craving for two incompatible dishes: a herbaceous Thai braise and a roast chicken on a bed of onions. The ingredient list was cut down repeatedly as the cook found what was missing from the cupboard.

What is actually happening in the dish, and why the techniques work.
The heat and the aroma of a chilli are made in two different tissues.
Capsaicinoids come from glands on the placenta. The placenta is the pale ridge inside the pod that holds the seeds. No other part of the fruit makes them. The seeds are only hot because they touch the placenta.
The aroma compounds are made in the pericarp. The pericarp is the flesh wall. Capsicum chinense makes esters there that give the apricot and floral smell of a habanero and a reaper.
The two systems do not overlap. So a fat extraction of the placenta gives an oil with almost no smell and very high heat. And flesh with the placenta removed smells like the whole pod at about one fifth of the heat.
This lets you control the two properties separately. Put the flesh in the paste for aroma. Put the placenta in the tincture and add the heat by the millilitre.
Capsaicin is strongly fat-soluble. Its partition coefficient is about 3.6. It is roughly 4000 times more soluble in fat than in water.
In warm oil with nothing to compete, the extraction is almost complete in 15 minutes at 65 degrees C. More heat gives almost no more yield.
More heat does give more vapour pressure. At frying temperature the capsaicin leaves the pan on fat aerosol. This is the same mechanism that riot control sprays use. It will make the kitchen unusable.
Use 80 ml of oil for six pods. Less oil is absorbed by the tissue and the yield falls. More oil only dilutes a fixed quantity of capsaicin.
Onions store carbohydrate as fructans. Heat breaks the fructans into free fructose and glucose. These sugars then react with the amino acids of the onion in the Maillard reaction.
Early in the reaction you get pyrazines and thiols. These taste roasted and savoury. The onion also releases free glutamate.
Later you get melanoidins and maltol. These taste of caramel and fudge. They have low volatility and they stay on the palate.
Those late compounds mask the high-volatility compounds of lemongrass and ginger. Citral, geraniol and the terpenes are lost behind them.
Deep gold gives you the glutamate and the body. It does not give you the mask.
A chicken Maryland is worked muscle. It holds a lot of type I collagen.
Collagen converts to gelatin slowly from 70 degrees C. The conversion is much faster above 80 degrees C. Hold the thigh at 85 to 90 degrees C for a long time. This is far above the temperature you would use for a breast.
The covered stage keeps the air in the tray saturated with water. The meat does not dry while the collagen converts.
But that same saturated air keeps the skin wet. Skin must lose most of its water before it can brown. So the skin cannot crisp under foil at any temperature.
The uncovered stage is a drying stage. It browns the skin because it dries the skin first. The fan matters here. Moving air removes the wet layer of air on the skin surface faster than still air.
Citral is the main aroma compound of lemongrass. It is a pair of molecules, neral and geranial. Citral is very volatile. It leaves with steam.
90 minutes at 145 degrees C removes almost all the citral from anything in the liquid. What stays is the heavier fraction. It is mild and woody. It is useful as a background.
The pounded stalks in the paste give fibre and the compounds held in the cell walls. These release slowly.
The raw shavings at the end are pure top note. They are not heated at all. They are the reason the finished dish smells of lemongrass and does not only taste of it.
The same logic applies to the coriander. The root goes in the paste because its compounds are less volatile and survive the braise. The leaf goes on at the end.
The vinegar and the lime are not interchangeable here.
The Chinkiang vinegar is a cooking acid. It replaces tamarind. It holds the sweetness of the onions and the fat in check across 90 minutes. Acetic acid survives that time. So do the amino acids and melanoidins from the rice ferment, which are not volatile.
Add more vinegar at the end and you add raw acetic acid. It has had no time to combine with the dish. You taste it as a separate sharp note.
Lime is the finishing acid. Citric acid is rounder than acetic acid. The lime also arrives with its aroma intact.
Tamarind leads with tartaric acid, not citric. That is why tamarind tastes round and does not taste sharp. Lime juice cannot do the tamarind job in the pot. Its terpenes boil off in minutes and leave a flat sourness.
