Glutinous rice
Almost pure amylopectin with next to no amylose, which is why it goes sticky rather than fluffy and why it toasts to a porous, friable grain rather than a hard one. Must be soaked before steaming — it will not hydrate in the steamer alone. Jasmine rice cannot stand in for either use.
