Mint

Spearmint rather than peppermint for Southeast Asian cooking — carvone-dominant and grassy, where peppermint's menthol reads medicinal against fish sauce. Add off the heat and fold barely: menthone and carvone volatilise, and bruising triggers polyphenol oxidase which blackens the leaf within minutes.
