Cooking of the Maghreb: Morocco, Algeria, Tunisia and Libya. Warm ground spices such as cumin, coriander and cinnamon, chilli pastes such as harissa, and slow cooking in tomato are common. Heat comes from dried chilli paste more than from fresh chilli.
