Octopus jar jelly
The jelly at the bottom of a jar of cooked octopus. It is gelatin from the octopus skin and connective tissue, set in the acid packing liquid. It melts near body temperature. Reduced in a hot pan, it makes a glossy film that holds oil on the food. It carries salt and a lemon sourness.
