Capers
The unopened flower bud of Capparis spinosa, cured in brine or in salt. The cure releases glucocapparin as methyl isothiocyanate, which gives the sharp mustard note. Rutin forms white spots on the bud and is harmless. Rinse them. The brine is saltier and sourer than the bud. Chop them roughly if they are large.
