Borrelli octopus in oil
Cooked octopus in a 200 g jar, from Borrelli in Manfredonia, Puglia, Italy. It is packed in oil with garlic and an acid brine. It is already tender, so it needs only a short sear on a dry surface. A lemon-flavoured gelatin jelly sets at the bottom of the jar. Use the jelly as a glaze. Use a spoon of the oil to start the cooking.
