Whole milk
Cow milk at about 3.5 percent fat. Here it is used to thin a quark base. It gives back the water phase that draining removed. Buttermilk and sparkling mineral water do the same job. Buttermilk adds more acidity. Mineral water adds none and lifts the base slightly.
