Sumac
The dried and ground fruit of the sumac shrub. It is dark red and sour. The sourness comes from malic acid and citric acid. It gives acidity without liquid, so it does not thin a sauce or a dairy base. Some brands cut it with salt: read the list of contents. Add it at the end. Heat dulls it.
