Spaghettoni

Dried durum wheat pasta, thicker than spaghetti. The thick strand releases more starch into the cooking water.\n\nThat starch helps hold an emulsion sauce, such as carbonara, together. Bronze-die pasta has a rough surface and holds the sauce better.\n\nSpaghetti replaces it. Cook it 1 min less than the packet time.
