Salt
Always weighed here rather than measured by spoon, because crystal size changes volume by a factor of two between fine table salt and a flake salt while the mass stays the same. Beyond seasoning it does structural work: it draws water osmotically from cut vegetables, and at moderate concentration it salts globular proteins in rather than out, shielding surface charges and improving their solubility. That is why a soy-protein sauce gets smoother with soy sauce in it, not grainier.
