A leaf of the mustard family. Its bitter and peppery taste comes from glucosinolates. Chewing breaks the cells and an enzyme turns these into isothiocyanates. Next to a rich dish it cleans the palate between bites. Dress it just before serving with acid and a little oil. The acid wilts the leaf within minutes.
