Pul biber
Coarse Turkish chilli flakes. The heat is moderate. The taste is fruity and slightly sour. Some brands add salt and oil: read the list of contents. The colour and the heat dissolve in fat. Add pul biber to hot butter or oil that is off the heat. Dried chilli holds sugar, and sugar burns above 150 °C.
