Peanut oil
Oil pressed from peanuts. It is the traditional frying oil in much Chinese cooking. Refined peanut oil has a high smoke point, near 230 °C, and little taste. Roasted peanut oil has a strong nutty taste and a lower smoke point. In a hot pan the oil is a solvent as much as a cooking medium. Capsaicin and the terpenes of chilli and Sichuan pepper dissolve into it. A neutral oil such as sunflower oil replaces it with no change to the method.
