Madeira
Fortified wine from the island of Madeira. It is heated and oxidised on purpose during ageing. This gives the nutty and caramel taste, and it is why an open bottle keeps for months. It is the classical wine of Sauce Périgueux and Sauce Madère. Simmer it for 2 to 3 min in the sauce. The alcohol leaves first and the aldehydes and esters stay. Dry sherry is the closest replacement.
