Jarred truffle

Truffle pieces preserved in oil in a jar. The one used here is from REWE. Treat the pieces and the oil as one ingredient: the oil holds much of the aroma. The aroma is mostly volatile sulphur compounds. They dissolve in fat and they leave a hot pan quickly as vapour. Add it off the heat and keep some pieces back to put on the plate. Read the list of contents on the jar. Many jarred truffle products also contain added truffle aroma.
