Galangal

Not interchangeable with ginger despite the resemblance. Its terpenoids run to 1,8-cineole and galangal acetate — camphoraceous and pine-sharp where ginger's zingiberene is warm and sweet. Denser and more fibrous than ginger, so grate rather than chop.
