Fresh dill
The soft leaf of Anethum graveolens. The taste comes mostly from carvone and alpha-phellandrene. The compounds are volatile. Add dill at the end, or off the heat. Heat removes the taste in about one minute. Use the fronds. The stalk is tough but holds taste, so it can go into a stock.
