Extra virgin olive oil

Oil pressed from olives with no heat and no solvent. The taste compounds and the bitterness are lost on high heat, so use it raw or at low heat when the taste matters. In a low fat dairy base it does structural work, not only flavour work. The fat coats the tongue where the milk fat is missing.
