Dried mint
Dried spearmint leaf, crushed. It is not a substitute for fresh mint. Drying loses most of the fresh top notes and leaves menthone and carvone. It is used in hot fat in Turkish and Levantine cooking. Add it off the heat. The compounds are volatile and leave the pan as vapour on a hot surface.
