Dried chilli, mixed
A working blend rather than one chilli, dosed by deseeded weight so the composition can flex with what is in the cupboard. Roughly 60% pigment chillies such as ancho and guajillo for capsanthin and fruit, 25% chipotle for smoke, 15% arbol or similar for clean heat. Capsanthin is fat-soluble and photolabile, so a bark built on it bleaches in a lit drying box.
