Cinnamon

Dried inner bark of Cinnamomum trees. The aroma is mostly cinnamaldehyde. Most cinnamon sold in Germany is cassia, which is stronger and harsher than Ceylon cinnamon. In a savoury tomato sauce use a very small amount, about 0.5 g for 400 g of tomato. It should not be tasted as cinnamon. It rounds the sharp edge of the tomato and the cumin.
