Chilli flakes

Dried red chilli crushed to flakes with the seeds. Generic supermarket flakes are usually cayenne-type chilli: hot and plain, with little fruit. Capsaicin dissolves in fat. Bloom the flakes in oil to spread the heat through the dish. Pul biber is a fruitier, milder Turkish flake with its own record.
