Bird's eye chilli
A small, thin-walled fresh chilli, 20 to 40 mm long, at roughly 50,000 to 100,000 Scoville. Thai and African bird's eye chillies are similar in size and heat. Use them at the same count. The heat arrives at once and is sharp. It does not build slowly like a Capsicum chinense. In a paste, pound it last and keep it coarse. Whole pieces give pockets of heat. A smooth pound spreads the heat evenly and it reads flatter. Most of the heat sits in the pale placenta inside the pod. Keep it in.
