Grilling
Cooking by radiant heat from coals, flame or an electric element, with the food held in the open air. In South Africa over wood coals it is a braai. Radiant heat is uneven and it changes as the fire burns down. So the surface char is a better record of the cook than one probe reading. Sugar in a marinade burns fast under it: baste or move the food before the char turns black.
