Dry-frying

Gan bian (干煸) in Sichuan cooking. Food is fried in a small amount of oil for a long time until its surface dehydrates, wrinkles and browns. It sits between searing and deep-frying. The dry, folded surface then holds spices and a small volume of sauce. Not the same as dry-toasting, which uses no fat.

    Green beans are dry-fried in oil until the skins wrinkle and blister. Pork mince, fresh shiitake and suimiyacai are fried together until the crumbs are crisp.
